If you are a mama feeding a plant-based or vegan toddler – or just a mama who needs some healthy meal inspiration for your kiddo – you’ll find inspiration below the cut. Willow eats a pretty wide variety of foods on a daily basis. I hope that these pics give you some ideas!
Toast with some green soup on top, baked tofu bites , and sweet potato.
Just eating our pad thai together… Willow’s is disassembled.
Pancakes topped with a bit of cinnamon applesauce, pear, and banana.
Baked mac and cheese with broccoli and some roasted butternut squash.
Annie’s vegan mac and cheese… which she basically refused to eat until I doused in ketchup. This kid will eat lentil curry but not boxed mac and cheese. LOL She kills me. Anyways, she went straight for the roasted butternut squash, no problem.
Zucchini pasta with roasted sweet potatoes.
Pancakes, berries, orange.
Smoothie snack – blueberries, banana, pineapple, orange, and spinach.
Tofu scramble (with some spinach, zucchini, and onion), berries, toast.
Pancakes topped with some yogurt, berries, and banana.
Willow’s Thanksgiving! Some tofurky, stuffing, cranberry, and gravy. Side of corn and squash.
Chocolate oats mixed with peanut butter, banana, and some mandarin (which she’s been really enjoying).
Lentil stew over rice and some garden tomato crunchies.
Black beans and rice, mashed potatoes, spinach.
GF waffle with peanut butter syrup and mandarins.
Lentil stew with quinoa, peas, and asparagus (which she very much disliked).
Pasta with chickpeas , tempeh, peas.
Vegan grilled cheese with some roasted squash.
Rice with chickpeas and some ketchup, roasted squash, peas and carrots.
Homemade spinach falafel, roasted squash, olives.
Blueberry muffin, banana, and orange slices.
