Vegan Pregnancy Meals: What I’ve Been Eating in Second Trimester
And just like that, eating way way better in my second trimester. The first tri was up, down, and all over the place. And don’t get me wrong, I will spoil myself and give in to my Oreo craving, but I’m eating a lot of good stuff to make up for the junky cravings. Still all about fresh fruit, avocado (SO MUCH AVOCADO), vegan cream cheese, burritos, etc. Also happy that I am still enjoying my usual oats for breakfast.
One of the junkier cravings I have been having is mug cake (this happened my last pregnancy, too). I am obsessed with this recipe. It’s my go-to.
Chik’n, vegan cheese, and sweet potato quesadilla with some guac.Chocolate oats mixed with ground flaxseed and topped with soy yogurt, almond butter, cherries, and strawberries.Tofutti cream cheese toast with avocado and a side of sautéed spinach and hot sauce.Cream of mushroom pasta for dinner.Large salad with tomatoes and a dijon mustard/acv dressing.Veggie wrap loaded with spinach, cucumbers, mushrooms, tomatoes, and lots of guacamole.Lentil stew, rice and corn, topped with avocado.More chocolate oats with almond butter, soy yogurt, and cherries.Quick salad with a maple mustard dressing.Vegan cream cheese and tomato on toast.Another day, another tofu scramble burrito with spinach and avocado.A vegan “chik’n” salad wrap made with Gardein chickenless strips. Vegan pizza night! Tortilla pizzas, of course.Escarole and beans.Vegan cream cheese toast with avocado and sautéed spinach on the side.Chocolate oats with ground flaxseed, almond butter, cherries.Ramen noodles with broccoli and shaved carrots with a peanut sauce (peanut butter, water soy sauce, and hot pepper flakes).Baked sweet potato with earth balance butter and a little cinnamon.Rice bowl with some tofu bites, roasted chickpeas, sweet potatoes, avocado, and hummus.Red pepper slices + curried hummus for snack.Decaf soy latte.I am craving oranges… like crazy.Buffalo chik’n salad wrap with lots of greens and a cashew dressing.Creamy cashew mac salad.
