Healthy Toddler Breakfast: Carrot Cake Oatmeal (Vegan)

Hi friends!

I am really excited to share this recipe with any mom or dad out there that also has a toddler that is picky with vegetables. Willow definitely has her favorites (thankfully) but carrots are not one of them. However, this oatmeal has gotten her to not only eat her carrots raw but enjoy them. She even picks the shreds out individually sometimes and eats as is. I was beyond thrilled to watch her gobble this up.

Since Willow is only 21 months, I don’t feel comfortable serving her raw carrot sticks just yet so the shreds make it easy for her to chew without any choking hazards.

I also love this breakfast because it is a very hearty meal for her that is packed with protein (oats, soy yogurt, and almond butter) and healthy fats (yogurt and almond butter). She can be picky at lunch sometimes, but if she eats this in the morning, I am happy to know she had at least a big and nutritious bowl of oats to kick off the day.

Anyways, enough rambling. Enjoy the recipe.


Recipe

Serving size: 1

You will need:

  • 1/4 cup rolled oats
  • 1/2 cup plant-based milk
  • 1 tsp ground flaxseed (optional)
  • 1 tbsp grated carrot
  • 1 tbsp grated apple
  • 2 tbsp coconut or soy yogurt (plain or vanilla)
  • 1/2 tbsp almond butter
  • Dash of cinnamon
  • Handful of raisins

To make:

  • Put 1/4 cup rolled oats and 1/2 cup plant-based milk in a large bowl and microwave on high for 3 minutes. You can also follow stove top instructions if you’d prefer.
  • Once done, mix in: ground flaxseed (if you want), grated carrot and apple, vegan yogurt, almond butter, cinnamon, and raisins.
  • Cool and serve.
