Hi friends! I am totally in summer mode when it comes to meals lately. Lots of quick dishes so I don’t spend a lot of time at the stove. While this requires stove time, it is not bad at all. It’s a quick and cheap go-to. Plus, I like to eat the leftovers cold.

Recipe
You will need:
- 1/2 lb of your favorite pasta
- 3 tbs olive oil
- 3 cloves garlic, minced
- 1 sweet onion, sliced thin
- 1 zucchini, sliced thin
- 1 summer squash, sliced thin
- 2-3 tbs water
- Salt and pepper, to taste
To make:
- Cook your pasta according to package.
- Over medium heat, add olive oil and minced garlic to a pan. Sauté until fragrant and then add your onions, zucchini, summer squash, and a bit of water. Turn heat down to low, cover, and allow to cook down for about 10 minutes, tossing occasionally. You want them to soften up quite a bit. After about 10 minutes, uncover and turn heat up to get rid of any excess liquid – about 5 minutes before turning off heat.
- Once pasta is done, add to your sautéed squash and onions and season with salt and pepper to taste.
Really simple and cheap stuff, friends. We’ve been eating this a lot lately (mostly because once I get on a “kick” with something, I can’t get enough). I’m lucky that my husband doesn’t mind repetition.
