Vegan Pregnancy Meals: What I’ve Been Eating in Second Trimester

Spaghetti squash topped with raw corn, tomatoes, avocado, and a drizzle of olive oil.Chocolate oats with warm berries and almond butter.Falafel wrap!Mashed cauliflower. So creamy.Snacking on spaghetti squash.More oats – same deal. Warm berries, almond butter… you know.His and hers Mediterranean plates! Some couscous, lentil salad, roasted red peppers, lettuce, tomato, hummus, tahini, and a pita wrap.A quick marinara sauce over ziti and some steamed broccoli.Strawberry pie :)So much mango lately. It’s so refreshing!!Date night dessert – vegan cake batter ice cream and a pb brownie.Veggie hash with some pesto and a side of cream cheese + tomato toast.Homemade roasted red pepper hummus on a bagel.Veggie and hummus wrap.Homemade potato + corn chowder. With lots of dill – the best!Breakfast burrito using the Just Egg – some salsa, guac, black beans, and sour cream.Chocolate oats with almond butter, ground flax, and a ton of fruit.Just Egg breakfast tacos.Date night – vegan chili cheese fries.Veggie burgers from our date night.Tortilla pizzas – some with red sauce, olives, and cashew cream and the others with pesto, tomato, and cashew cream.And more mango.Spaghetti with tomatoes and pesto.Lentil stew over rice and a ton of spinach.I ate this black bean burrito for breakfast. It was that kinda day. Some corn, salsa, avocado, and cashew cream in there.Rabe with lots of garlic and olive oil. I meant to add pasta to it but it was so good, I just ate this whole thing as is.Sesame bagel with homemade cashew cheese + herb spread, topped with tomatoes and basil.Pasta with broccoli.Pesto tortilla pizza with grape tomatoes.Potato hash.Coconut lentil stew that I shared with Willow. So yummy.Sweet potato fries and a homemade ranch dressing (I used some vegan mayo, soy milk, garlic powder, onion powder, salt, pepper, and dill).Broccoli rabe pasta!Freshly picked strawberries.Strawberry muffin.Veggie nim chow takeout.This wrap is literally a hodge podge of things… some gardein chik’n, tomatoes, peppers, corn, bbq sauce, a vegan ranch, lettuce… it was a lot, but good.Mango happiness.Pitaya bowl with some mango, banana, and coconut for an afternoon snack.Brunch with bagels, pancakes, and lots of fruit.Cherry + strawberry smoothie made with almond milk, kale, and some almond butter.Cherries are arguably my favorite part of summer.A vegan feast with Willow and my Nana – cinnamon knot, oat + fruit bar, coconut yogurt parfait. We shared everything :)S’more with a vegan marshmallow. Weee! One of my favorite desserts ever.Roasted cabbage!A kale salad my mom brought over… lots of nuts, seeds, dried fruit, and tahini. So good!Potato and chickpea curry! So spicy and delicious.Loaded veggie pizza night with cashew cream.Leftovers bowl – some quinoa, lentils, peas, and sweet potatoes covered in tahini. Because tahini makes everything better :)Greens salad with cranberries, pepitas, cukes, and some Violife feta cheese. Side of tofu salad sandwich – my mom made all this for us :)Potato and chickpea curry. Yay for iron.Homemade popsicles! Fruit, yogurt, and kale.Pasta with lots of garlic and veggies – I think there’s onion, zucchini, kale, and grape tomatoes.Another lunch with my mom – same salad as mentioned earlier, but this time with some curried noodles.
