Vegan Pregnancy Meals: What I’ve Been Eating in Third Trimester
I’ve been eating pretty balanced lately… lots of carbs and even some fried food (craving) but also lighter and healthier options. I find that my hunger peaks in the afternoons lately and then by dinner I don’t want much and usually end up having something small and maybe some cereal or fruit before bed. I actually prefer eating this way, to be honest. I hope you enjoy the inspiration.

Tomato salad with lots of fresh basil and garlic, side of crusty bread (no, I didn’t eat the whole loaf but… I could have. LOL. Also, looks so pretty all together). Fried squash flowers!! xoAnother morning, another soy mocha latte.Smoothie packed with blueberries, cherries, banana, walnuts, flax, soy yogurt, spinach, and ripple milk.Mango and avocado rolls with spicy peanut sauce.My husband made this baked ziti with vegan beefless crumbles and vegan mozz. It came out so good! He’s great in the kitchen.I don’t remember what was in this smoothie, but probably banana, berries, spinach, and cocoa powder… or something along those lines.Eggless spinach and zucchini quiche with a side of jammy toast.Vegan alfredo pasta with some broccoli.Bean & vegan cheese quesadilla with some sides.Homemade roasted red pepper & chickpea burgers.Broccoli rabe pasta... again.Smoothie with: banana, strawberries, spinach, unsweetened cocoa powder, coconut milk, and peanut butter (or almond butter? I can’t remember.)Baked sweet potato topped with corn, gardein beefless crumbles, and a quick cashew sour cream. These meals are the most satisfying these days!Simple almond butter toast. Not every breakfast is glamorous!Chickpea and sweet potato curry with rice. Give me all the Indian food this pregnancy.Snacking on lemon dill cashew dip with veggies.Butternut squash – my favorite veggie of autumn!! So excited to eat this every single week. I kid you not.
