I can’t believe this is the last round-up of what I have been eating this pregnancy. It flew flew flewwwww by. Now we’ll be moving onto what I am eating postpartum as a breastfeeding mama! Keep an eye out in November or December for that post. I am planning on compiling like crazy while I take a short “leave” (more on that soon).

Vegan breakfast sandwich from a favorite local spot – this one has vegan sausage, tofu, avocado, spinach, and daiya cheese.
Loaded taco night – pinto beans, corn salsa, lettuce, queso, and lime crema.
Broccoli rabe pasta and a side of butternut squash.
We totally had a homemade vegan grinder night and it was so good. This is loaded with some vegan cheese, tofurky, vegan pepperoni, lettuce, tomato, oil, vinegar, vegan mayo, and salt and pepper. omg. I know it is a lot, but I was craving.
Vegan cream cheese toast with some jam.
Spinach and zucchini scramble with a little vegan parm on top and side of toast.
Shredded potato hash.
Broccoli cheddar soup and crusty bread!
Chickpea noodle soup … sans noodles. Because I was lazy.
Italian toast with vegan chive cream cheese… I just mixed in some fresh chives from my herb pot!
Soy chai latte.
Some loaded potatoes for a really filling lunch. Vegan sour cream, avocado, tomato, salt, and pepper.
Spicy peanut noodles. Similar recipe here .
Chocolate strawberry nice cream for snack with some peanut butter!
Early autumn rolls, full of sweet potato, greens, zucchini, carrots, and tofu. Spicy peanut dipping sauce.
Huge tray of vegan nachos for dinner!
Big salad for lunch… nothing fancy, just a bunch of veggies tossed with a creamy cashew dressing.
Fried straw mushrooms, mashed potatoes, and corn. Pretty comforting dinner.
We tried the Beyond Meat bratwurst for the first time. Didn’t disappoint.
Homemade biscuits with jam for breakfast.
Potato, chickpea, and spinach hash with some vegan cheese for breakfast. Great for protein and iron!
Vegan croissants… and I definitely ate a little bit of each. Plain. almond, and chocolate. YUM.
Tofu scramble breakfast burrito with some peppers, spinach, onion, black beans, vegan cheese, and vegan sour cream… little bit of hot sauce to top it off.
Escarole and beans . Been eating a ton of this.
Roasted cauliflower topped with a little vegan parmesan cheese.
Teriyaki chik’n and broccoli served over rice.
