Easy Vegan Falafel Wraps (Cashew Tzatziki Recipe)

Hi friends!

Fast and easy meals for this family. That’s the name of the game, really. And that is what these falafel wraps are. The real secret is that the falafel is frozen from Trader Joe’s. The only thing you really have to make is the tzatziki (unless you feel like making your own hummus, too). Homemade cashew tzatziki is SO EASY and really ups the wow factor. I’ll also include my homemade hummus recipe if you are interested.

Tzatziki Recipe

You will need:

  • 1/2 cup cashews
  • (about) 1/3 cup water
  • Juice from 1/2 lemon
  • 1 tbsp apple cider or white vinegar
  • 1/2 tbsp dried or fresh dill
  • Pinch of salt and pepper
  • 1/4 cup diced up cucumber (optional)

To make:

  • Add everything except cucumber and dill to your blender and run until smooth and creamy.
  • Stir in dill and cucumber.
  • If it is too thick, thin out with more water as needed.

Hummus Recipe

You will need:

  • 1 can chickpeas (drained)
  • 2 tbsp tahini
  • Juice from 1/2 lemon
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • Dash of smoked paprika
  • Water to thin out (if necessary)

To make:

  • Add everything to your blender and run until smooth – add water as needed for desired consistency.

Once these things are made (and again, feel free to use store-bought hummus obviously) then you just have to prepare your falafel according to the package and put everything together in a big ‘ol wrap. I like to add lettuce, tomatoes, and banana peppers to ours, but feel free to use whatever you have on hand.
