Vegan Broccoli Pie Calzone

Hi friends!

A quick and easy recipe today (the name of the game in my house). Spinach pies are always my favorite, but these are a close second. I posted a photo on my IG and a lot of you were interested in the recipe, so here it is!

Broccoli Pie

Recipe

Oven: 400 degrees F
Cook Time: 30-35 min

You will need:

  • Handful of flour
  • 1 lb dough (I always use pre-made)
  • 3 cups cooked or frozen broccoli, roughly chopped (make sure you thaw and squeeze any excess liquid if using frozen)
  • 3 cloves garlic, minced
  • 1/3 cup olives, sliced
  • 2 tbs olive oil
  • Dash of: salt, pepper, onion powder, nutritional yeast (optional)
  • Sprinkle of vegan cheese (optional)
  • Cooking spray

To make:

  • Preheat oven to 400 F.
  • Toss a handful of flour onto a flat surface and roll out dough horizontally. You’ll want it to be tall enough to add filling and close up.
  • Line a long baking sheet with foil and coat with cooking spray. Add long piece of dough – I make mine fit on the baking sheet by shaping the dough into a crescent. Set aside.
  • In a small bowl, add chopped up broccoli (cooked fresh or thawed frozen), garlic, olive oil, black olives, onion powder, salt, and pepper. Mix well and then line the dough with filling.
  • Sprinkle your favorite vegan cheese shreds on top, if you’d like.
  • Close up the dough by pulling the excess dough over and pinching it to seal.
  • Spray with cooking spray (or brush with a bit of olive oil) and add a dash of salt.
  • Cook at 400 F for about 30-35 minutes, or until golden on top.
  • Allow to cool before cutting into slices – it will be super hot! Serve.
