Hi friends! Another round-up of meal ideas. I have let a lot of these sit on my phone since Jan/Feb. Oops. So some of these might look familiar if you follow me on IG but still, good reminder and inspiration, right? Enjoy! xo
English muffin with hummus and an olive/tomato mix.
Couscous topped with teriyaki tofu and broccoli.
Stuffed shells (stuffed with cashew cream) and a side of green veggies.
Couscous topped with sautéed kale, tomatoes, olives, and olive oil.
Quick salad with some buffalo tempeh, carrots, corn, oil, and balsamic vinegar.
Red lentil pasta on top of garlicky kale, tomatoes, and olives.
Leftover vegan mac and cheese and a side of buffalo tempeh.
Couscous with baked zucchini and a baked potato.
A simple veggie soup with quinoa, carrots, celery, and chickpeas.
Veggie and red pepper hummus sandwich.
Lots of veggies with pearl couscous and a baked potato.
Turmeric & tofu soup .
Roasted cauliflower, couscous, corn, and a baked potato.
English muffin with apricot preserves.
Peaches and cream yogurt for us both – just oats made with coconut milk. I mixed in ground flaxseed, maple syrup, and diced peaches. Topped with soy yogurt.
Grapefruit for breakfast.
Another fruit morning – mango, banana, and lots of clementines.
Kale salad with dried fruit, nuts, seeds, and a cashew lemon dressing with nutritional yeast.
Lentil daal and rice.
Steamed kale and cream cheese and tomato on an english muffin.
Red lentil spaghetti with a cashew sauce and veggies.
Homemade dumplings , teriyaki broccoli & tofu, side of rice.
Tofu and veggie quiche and avocado on wheat bread.
Lentil bolognese sauce on elbows.
Black bean & tempeh taco night.
Sweet potato and couscous.
Kale salad with cranberries, dried apricots, cucumbers, chia seeds, lemon, tahini, and nutritional yeast.
Fruit for breakfast!
Tofu quiche breakfast sandwich with some cashew cream and hot sauce.
Zucchini chip muffins!
Buffalo cauliflower with a side salad, veggies, and vegan ranch.
