Plant-Based Diet: What I Ate

The thing I love about toast is you can literally put anything on it, and make it work. I’ve mentioned on here before that I’ve been playing around with different combinations and feeling inspired – especially when I go to Shayna’s Place (local spot) because they have some of my favorite toast toppers ever.

This isn’t really a recipe post, but just some inspiration. I made the above and it’s become a favorite. It’s the perfect combination of savory and sweet and very easy to make quickly – so you know, feels like a decadent breakfast these days.


Recipe

You will need:

  • 1 slice bread (I love Ezekiel)
  • 1/2 avocado, smashed with a fork
  • 1/2 tsp chia seeds
  • Sprinkle unsweetened coconut flakes
  • Sliced strawberries

Layer up your toast and dig in. I didn’t have any local honey on hand, but I imagine that would work beautifully (not vegan, but for those who do eat honey!)
