Let’s try something different today. Instead of a what I eat in a day, how about what I eat in a week? Breakfast edition. I love watching YouTube videos like this so I thought it would be fun to pull together. If you are in a breakfast rut or need some new ideas, maybe one or some of these will appeal or spark something. I hope so, anyway!
Spoiler alert: this is a realistic look so you’ll see a lot of oats. I’ve said before that I eat oats for breakfast more times than not, and I am not kidding. But there are a few different kinds so hopefully you’ll still enjoy it.

Monday
Kicking off the week with one of my usuals. Oats prepared according to package with unsweetened cocoa powder and ground flaxseed mixed in. Topped with some warm berries (recipe here) and melted peanut butter. This is very filling and and belly-warming.
Tuesday
Tofu breakfast sandwich! I made some vegan quiche and then added to toasted bread with hot sauce, avocado, and vegan cheese.
Wednesday
I call these chocolate chunky monkey oats for my kids. ;) I was rushing around this morning so oats was the quickest thing to make. Oats according to package with unsweetened cocoa powder, ground flaxseed, mashed banana, and peanut butter swirl. I’m sorry that this is a boring one, but… it is delicious! And this is real life.
Thursday
Okay, more oats. But these are pumpkin! And so delicious! I make oats according to package and then add a couple tbsp of canned pumpkin purée, pumpkin pie spice, raisins, and some peanut butter. SOOOO comforting!
Friday
Used the remaining tofu quiche to make a breakfast burrito. Added black beans, guac, salsa, and unsweetened cashew yogurt (makes great sour cream!)
Saturday
Chickpea egg sandwich! Added some vegan cheese, avocado, a little vegan mayo, and hot sauce. SO SO GOOD.
Sunday
Happy happy Sunday with this butternut squash & chocolate chip loaf. With hot coffee, this is bliss. Perfect way to end the week.
