What I Eat in a Day (Vegan Weight Watchers)

Hi friends!

Another what I eat in a day for you guys. These have been a bit easier to pull together lately. I hope that you find as much inspiration in the “eat in a day” posts vs. the what I have been eating lately. You can always browse the archives for the lately posts… there are so much with lots of food inspiration!

I’ll include points in the below again for reference in case that is why you are here. If not, then ignore it. Enjoy! x


Breakfast:

1/4 cup rolled oats cooked (2 points) with 1/4 cup unsweetened almond milk (0 points) and 1/4 cup water. Stir in 1 tsp ground flaxseed (0 points) and 1/4 cup unsweetened cashew yogurt (1 point). Topped with peaches and cinnamon. 3 points

I also had a homemade iced coffee with cinnamon. The almond creamer I use is 1 point for a tbsp. 1 point

Snack:

I snacked on a ton of fruit this morning – grapes, mango, and strawberries. I forgot to take a photo, but you get the gist. 0 points

Lunch:

What I Eat in a Day (Vegan Weight Watchers)

I love this cauliflower dal recipe. It’s 0 points per serving! I had 1 cup with 1/2 cup quinoa. 4 points

Snack:

What I Eat in a Day (Vegan Weight Watchers)

I love these Snap Crisps. 24 for 3 points. I also had an apple and a banana for 0 points.

Dinner:

What I Eat in a Day (Vegan Weight Watchers)

2 oz of pasta (6 points) with a spicy veggie sauce that has some zucchini, summer square, diced tomatoes, onions, garlic, and chickpeas. The sauce is 0 points! Topped with nutritional yeast for 0, as well. 6 points

Dessert:

I had 6 points left in the day so I ate some vegan Ben & Jerry’s because… why not!! I had 1/3 cup of the chocolate fudge brownie flavor. 6 points
