What My Plant-Based Toddlers Eat in a Day

Hi friends!

I am always compiling a hodge-podge of meals my kids eat but I thought maybe you’d like to see what they eat in a day instead. Nice to switch it up, right?

This isn’t for comparison and please know my kids don’t always eat everything on their plate (like…usually at least one meal a day is completely picked at). But this is typically what I day looks like for us. Real deal over here.


Breakfast

What My Toddlers Eat in a Day (Vegan Meals)

Breakfast is strawberry and cream oats, which is a favorite for everyone. My kids love it because it is very tasty but I love it because I can really pack in the nutrition and healthy fats first thing in the morning.

To make: I prepare the oats according to package using soy milk. Once done, I stir in a tbsp of ground flaxseed or chia seeds. I mash about 1/2 banana for some sweetness. Thaw frozen strawberries or slice fresh ones (we prefer frozen these days) and add. The creaminess factor comes from cashews! I quickly blend about 1/4 cup cashews with a little soy milk and then stir in. So so so yummy!

Both girls ate all of it.

Snack #1

My girls had smoothies for snack. I actually forgot to take a pic so here is an older pic with our favorite smoothie cups! We have the elk & friends stainless steel smoothie cups. (affiliate link)

The smoothies today were spinach, mango, banana, chia seeds, coconut yogurt, and soy milk. This is one of the only ways my kids get their greens in because they are very skeptic still.

Lunch

Both girls had a lentil, rice, and veggie stew with a side of sprouted toast with Earth Balance and blackberries. Willow enjoyed this because she helped me make the stew! Fiona was iffy on the stew but picked at it. They both ate their toast and berries.

Snack #2

What My Plant-Based Toddlers Eat in a Day

Both girls had some freeze-dried strawberries (which they loooove) and some chocolate animal crackers. The afternoon snack is almost always a packaged snack. It’s how we do balance in this house!

Dinner

What My Plant-Based Toddlers Eat in a Day

Red lentil pasta with red sauce, berries, and cucumbers. Both girls are not fans of cukes but we keep trying. They both ate the pasta and berries and left the cukes ;)

After Dinner

This doesn’t always happen but sometimes after dinner they will ask for a bedtime snack (well, Willow) so they each had a little cup of life cereal and soy milk on the side. Didn’t get a pic.
