Brown rice, mashed sweet potato, broccoli, and sriracha cashew cream.Couscous with steamed broccoli and vegan queso.Oats topped with date caramel, choco sauce, ground flax, and bananas.Pancakes topped with cocowhip and cinnamon apples.Chickpea egg sandwich with hot sauce, vegan cheese, cashew mayo, and greens.Red Thai curry with all the veggies over rice.Burrito bowl. Again.Salad topped with chickpea salad – this recipe, but with chickpeas instead of white beans.Cashew curry over grains.Cashew alfredo with roasted broccoli.Leftovers bowl all jazzed up – bean chili and rice with lettuce, corn, tomatoes, vegan queso, and avocado.Garlicky bok choy with rice and cashews.Big bowl of lentil stew.Smoothie! This one has banana, blueberries, cherries, strawberries, spinach, ground flax, walnuts, and oat milk. Cashew alfredo with spinach, tofu, pepper, and nooch.Burrito bowls all the time… honestly. It’s just the easiest to pull together during the week.Cashew cheese pasta with air-fried cauliflower and zucchini.Strawberries and cream overnight oats. Bean, corn, rice, lettuce, and vegan queso burrito.Nourishing bowl with grains, air-fried brussel’s sprouts, tempeh, and maple mustard drizzle.Cinnamon apple oats. Sooo comforting. Similar recipe here.Rice bowl with bok choy, garlic, mushrooms, celery, cashews, and sesame seeds.Banana oat pancakes topped with strawberries.My go-to smoothie lately: frozen bananas, strawberries, a date, almond milk, and ground flaxseed. Such a treat.Veg and tofu stir fry night.Oat and chickpea pancakes with warm blueberries.Rice and black bean bowl with air-fried herb potatoes and a creamy cashew maple mustard drizzle.Lemon chickpea and orzo soup.Rice and lentil bowl with air-fried sweet potatoes, lettuce, corn, salsa, and cashew cream.Iced oat milk latte with stevia from our favorite local bakery. And a nice loaf of bread for later!
