What I’ve Been Eating Lately (Whole Foods Plant-Based) Hi friends – here’s a round-up of what I’ve been eating. x Oat pancakes with strawberries and choco/maple syrup sauce drizzle. Brown rice bowl with sauerkraut, avocado, cucumbers, and tahini drizzle. Banana oat mug cake topped with chocolate/maple syrup sauce and bananas. Cereal before bed. I made a quick spinach and artichoke dip by sauteing artichokes, garlic, and some canned spinach. I added a bit of my vegan queso to make it creamy and ate with air-fried tortilla chips. Cooked oats topped with some banana smoothie, chocolate date sauce, and tahini drizzle. SO DREAMY. Bananas, strawberries, blueberries, blackberries, medjool date, pb2, cinnamon, and oat milk. Burrito bowl takeout. The pickled radishes are the beeeest part. Brown rice, air-fried zucchini, sauerkraut, and lemon hummus drizzle. Random veggie sandwich with hummus and balsamic. Air-fried pita topped with mashed white beans, red roasted peppers, red onion, and ranch cashew dressing. More pancakes with berries and chocolate sauce. White bean burrito bowl. Breakfast with the fam – an acai bowl and blueberry bagel with cinnamon butter. Pasta with tomatoes, peppers, artichoke hearts, olives, hummus, and lots of garlic. Spelt pancakes with berries and syrup. Fajita night! Topped air-fried corn tortillas with peppers/onion.mushroom fajitas, vegan queso, cashew sour cream, corn, lettuce… Roasted red pepper sandwich with raw veg, hummus, and balsamic. Leftovers bowl with refried beans, sweet potatoes, queso, broccoli, pickled red onion… it’s a hodge podge. Nacho night! Topped with black beans, corn, vegan queso, salsa, lettuce, pickled red onions, and cashew sour cream. Steamed cauliflower and mini potatoes with queso. Brown rice bowl with spinach, mushrooms, sauerkraut, and lemon hummus. Date night with my husband and this is the beeeeest vegan reuben EVER!! It’s my favorite date night spot for this reason.
