Hi friends! Loads of inspiration for ya here. One thing to note is that aside from all these glorious meals, I also snack during the day on random fruit, veg and hummus, popcorn, nuts, and sneak a square of chocolate here and there. I just don’t take photos of those things. I hope you enjoy. x

A loaded salad with lots of romaine, red cabbage, beans, corn, pickled red onion, and a cashew ranch dressing.
Oat pancakes topped with cooked cinnamon apples and almonds.
My favorite blended oats with blueberries, raspberries, and nuts.
Couscous, sweet potatoes, avocado, and tahini drizzle.
Lemony lentil curry with jasmine rice and tomatoes.
Oats with pb chocolate sauce and bananas. Some nuts.
Chocolate hummus and apples.
Udon Thai curry with all the veg.
Refried beans, yellow rice, greens, avocado, pickled lettuce.
Again… can’t stop won’t stop.
Vegan sushi bowl.
Lettuce wraps with a broken up leftover bean burger, some onion, and ketchup.
Shaved carrot salad drizzled with a bit of rice vinegar and a bit of salt and sesame seeds.
Cheesy hash browns with squash and green beans. I use my vegan queso for the sauce.
A simple dinner I have enjoyed lately is sauteing peppers with some taco seasoning. I added chickpeas and then topped on rice. Bit of cashew sour cream, too.
Fast potato salad and some broccoli. This is the recipe I use but instead of Just Mayo, I prefer cashew cream as of late.
Cooked garlicky cabbage with all the nooch.
Sweet potato pudding with almonds and raspberries.

Couscous with chickpeas, random leftover cauliflower, baked sweet potato wedges, and avocado. Tahini drizzle.
I always kick my day off with a plate full of non-starchy veg. As you can see, my go-tos are cabbage, zucchini or summer squash, broccoli, green beans, or cauliflower. But here we have cabbage and squash. Nooch is a must, too.
