Hi friends! Here’s what I have been enjoying lately. Eating gluten free has been getting easier as I’ve found substitutes that I enjoy. While it still feels strange and can be difficult at times, my body feels so much better and that alone is worth it. I hope you enjoy the inspiration. x
Rice noodles and broccoli with a spicy almond butter sauce.
Rice crispies with freeze-dried strawberries and bananas. Vanilla almond milk.
Mango, banana, spinach, date, and almond milk smoothie.
Black bean soup. I served with a side of air-fried corn tortilla chips.
Gluten free waffles from Target with chocolate date syrup and bananas.
Thai noodle soup. I love Thai red curry paste so much. I added to my veggie stock and a bit of coconut cream. Corn and spinach, too.
Salad with TJ’s frozen falafel, vegan tzatziki, hummus, tahini drizzle.
Creamy oats with choco date syrup and almond butter.
Cauliflower and butter bean curry over jasmine rice.
Baked chocolate oats with almond butter.
Air-popped popcorn topped with dark chocolate drizzle, candy cane bits, and sea salt. This was a fun festive snack for me and the girls.
Corn tortilla nachos with beans, vegan queso, corn, salad, hot sauce, cashew sour cream.
Chickpea egg omelet loaded with veg.
Creamy oats with warm cinnamon apples.
Black bean peppermint brownies. I followed the recipe from Plant Based Juniors. They were amaaaazing.
I always show meals but I eat a ton of fruit throughout the day to snack on, so I snapped a fast pic. Handful of mandarins. They have been so good lately.
