It’s been nice over here lately. Days spent with my Willow, cooking in between her naps, watching some Netflix (and lots of Disney movies with her!) But I am definitely looking forward to better weather.
This is a simple dish, and really inexpensive. For me it’s like… pasta, 99 cents for a box. Can of tomato paste runs about 30 cents here. Chickpeas, about 60 cents. Garlic and onion… literally pennies. For such a hearty dish, it only runs you a couple dollars for the whole thing, and literally cents per serving. I love a good budget meal.
Recipe
You will need:
- 3 tbs olive oil
- 3 cloves garlic, minced
- 1 small vidalia onion, sliced thin
- 1 6-oz can tomato paste
- 5 tomato paste cans of water (yes, I just used the same can)
- 1 can chickpeas (drain first)
- Dash of red pepper flakes
- Salt and pepper, to taste
- Pasta of your choice (I like elbows best, but it is also great with spaghetti!)
To make:
- In a pan over medium heat, warm up olive oil, then add minced garlic and onion. Allow to cook until fragrant and soft (about 2-3 minutes).
- Add 1 small can of tomato paste then 5 cans of water (I use the same can to make it easy). Stir well so it isn’t lumpy.
- Drain a can of chickpeas and add to sauce, along with spices: red pepper flakes, salt, and pepper (all to taste).
- Allow sauce to simmer for about 20-25 minutes.
- Meanwhile, prepare pasta and add to the sauce when done.
- Toss gently and serve!
I added a bit of vegan parmesan cheese to mine for extra flavor, but it isn’t required. I hope you enjoy. xx bianca
