This one was a bit soupy but delicious nonetheless. Added creamy oats and jammy berries.Burrito bowl with rice, beans, corn, salsa, lettuce, cashew sour cream, and hot sauce.Homemade strawberry shortcake!Chocolate banana nice cream and oats with chocolate date syrup.Linguini with mushrooms, peas, salt, pepper, and nooch.Blended oats with mango, raspberries, and almonds.Spicy peanut noodles with veggies and avocado.Another summer breakfast go-to is cold cereal and berries with almond milk.Chocolate banana nice cream with almond bits.Rice and lentil bowl with green beans, avocado, and tahini drizzle.Creamy oats and jammy berries.Rice and lentils with peas and green beans and a creamy cashew BBQ sauce.You know the deal.Corn chex and berries!Chocolate mug cake and strawberry banana nice cream.Spicy peanut tofu salad. This was sooo good. I shared the recipe here.Tofurky and cheese sandwich with some cukes and sauerkraut.Tostadas! I like mine with mashed beans, queso, corn, vegan cashew cream, and salsa verde.Mashed potatoes, cabbage, cheesy tofu, and corn.Creamy blended oats with blueberries and almonds.Cheesy hash browns with lots of extra veg, salsa verde, and vegan cashew cream.Rice, corn, and lentil bowl with carrots, vegan cashew cream, and bbq sauce.Brown rice with zucchini sauteed in soy sauce. Simple and satisfying lunch!Leftover vegan meatballs and sauce that I quickly tossed with some frozen peas and peppers. Added to leftover couscous… basically… none of it makes much sense but it was delicious. Ha!Tofu chik’n noodle soup. Similar to my chickpea noodle one.Rice and turmeric cabbage/carrot soup.Oat pancakes with chocolate maple syrup and strawberries. Side watermelon.Spicy rice noodle bowl with all the tofu and veggies. Creamy oats and blueberries.Lentil taco bowl. I cook canned lentils and corn with a taco seasoning packet. Add some rice, lettuce, more corn, cashew sour cream, hot sauce, and some broken tortilla chips.Creamy oats, banana nice cream, chocolate sauce, and strawberries.Rice bowl with carrots, green beans, a spicy peanut sauce, and sesame seeds.Rice noodle bowl with bok choy, cabbage, and tofu. Cashew curry over brown rice.Pepper & onion fajita night with side of black beans, rice, corn, avocado.Blueberry and banana nice cream with berries and almond bits.Couscous with raisins and almonds. Topped with cucumber.Spicy PB rice noodles with tempeh, cabbage, and carrots. For the PB dressing, I blend together: PB2 powder, rice vinegar, sriracha, maple syrup, and garlic powder with a bit of water to thin.Hashbrowns with queso and kechup.Chickpea eggs on corn tortillas with lettuce, avocado, hot sauce, and drizzle of cashew ranch.Cardamom oats and chocolate banana nice cream topped with a chocolate date syrup and strawberries.More hashbrowns and queso and a side of steamed cabbage.More of these spicy pb rice noodles with lots of veg and tempeh.Chickpea egg wrap with lettuce, cashew cream, and hot sauce.Burrito bowl for lunch. Brown rice base and topped with pinto beans, guac, corn, tomatoes, lime, and a sriracha lime dressing.Bananas, strawberries, blueberries, blackberries, medjool date, pb2, cinnamon, and oat milk.Whole wheat bagel sandwich with red pepper hummus, lettuce, tomato, and red onion.Oats with baked cinnamon sugar apples on top. I followed Ellen Fisher’s recipe for this.My favorite blended oats with blueberries, raspberries, and nuts.Oat and chickpea pancakes topped with jammy berries.fresh tomato & basil pasta and sidesRice with Cajun Daring chik’n and garlicky kale for dinner.Some loaded potatoes for a really filling lunch.Living for summer rolls!!Garden romaine topped with chickpea salad, red cabbage, carrots, avocadoAvocado toast and nectarines… which have been my favorite fruit this season.Salad Creamy blended oats with strawberries, pumpkin seeds, walnuts, and drizzle of maple syrup. I like to make my oats with soy milk for an extra protein boost.I made a lentil/walnut taco meat and enjoyed that as a salad with all the toppings. I love using Kite Hill Greek yogurt as my sour cream. So good and lots of protein.Delicious oat chickpea pancakes topped with yogurt, berries, pumpkin seeds, syrup.Love these PB oat bars with chocolate and nuts. I keep them in the freezer at all times. I found this recipe from Five Sec health.Chocolate oats with a little Kite Hill Greek yogurt, berries, pumpkin seeds, and walnuts.Toast with vegan cream cheese, tomato, red onion, and cucumbers with a side of veg for breakfast.A no-nori sushi bowl with rice, carrots, cukes, sauteed mushrooms, avocado, soy sauce, and sesame seeds.rice, roasted veg, and tahinirice noodles with sriracha, veg, and cashewsOats topped with choco date sauce (recipe in eBook), and frozen cherries.Garlicky bok choy, brown rice, and turmeric tofu.Taco pasta.Oats with ground flax, cinnamon, and peanut butter.Stuffed collards with a baked potato (topped with unsweetened cashew yogurt and chives). Side of avocado.Banana and mango smoothie. Simple and so good.Loaded taco night – pinto beans, corn salsa, lettuce, queso, and lime crema. I made a lentil/walnut taco meat and enjoyed that as a salad with all the toppings. I love using Kite Hill Greek yogurt as my sour cream. So good and lots of protein.Red lentil pasta on top of garlicky kale, tomatoes, and olives.Green smoothie with banana, pineapple, orange, spinach, ground flax, and oat milk.Banana nice cream and oats with chocolate date syrup.Oats with caramel date sauce and chocolate sauce.Big bowl of lentil stew.Kale and vegan meatball pizza made by my husband… YESSS.Barley and mushroom soup.
