Pomegranate scones. Yes, these are probably my favorite scones of all time. The pom seeds are like little surprises, bursting with every bite. Quite a description, eh? Seriously though, you need to experience it for yourself. Just two bowl and about 20 minutes is all that stands between you and these puppies!
The Recipe
Oven: 400 F
Time: 20 minutes
You will need:
- 1 cup pomegranate seeds (about 1 pom)
- 1 cup white flour
- 1 cup whole wheat flour
- 1/3 cup cane sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup Earth Balance butter [chilled]
- 1/2 cup soy milk
- 1 tbs ground flaxseed + 3 tbs water, mixed
- 1 tbs white sugar
To make:
Step 1: Deseed Your Pom
Step 2: Add Dry Ingredients + Butter + Pom
Flours, baking powder, baking soda, sugar, and salt in a large bowl. Add chunks of chilled butter and lightly knead with your hands. Add Pom seeds. The texture will be gritty, like this:
Step 3: Add Wet
In a small bowl, mix soy milk and your flax “egg replacer.” Add to dry and mix well. You’ll want to start kneading the dough with your hands. Eventually it will look like this:
Step 4: Prep for Baking
Knead your dough into a 8-9 inch circle and add to a parchment-lined pan. You may want to flour the bottom a bit. Cut into eighths and sprinkle with white sugar.
Step 5: Bake!
Bake those babies for 15-20 minutes, or until golden brown on top. How gorgeous do they look?
