Nothing says “I love you” or “thanks for being a good neighbor and never calling the cops on us” like homemade cookies. Hell, nothing says CHRISTMAS like homemade cookies. From scratch, flour on your face, batter on your fingers and a heavenly aroma in the air. Let’s do it.
Today, I bring you Chai Spice Snickerdoodles. What could be cozier than a warm cookie based off of a warm drink? You gotta try this recipe, which is a play off of this one. I added crushed peppermint in the topping because, Christmas. Make these. Delight people. Delight your damn self.
The Recipe
Oven: 350 F
Baking Time: 10-12 min.
Ingredients:
- Topping:
- 1/4 cup sugar
- 1/4 tsp ground ginger
- 1/4 tsp cinnamon
- 1 candy cane, crushed
- Cookies:
- 1/2 cup canola oil
- 1 cup sugar
- 1/4 cup pure maple syrup
- 3 tbsp non-dairy milk
- 2 tsp pure vanilla extract
- 2 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
The How To:
Step #1: Prep Baking Sheet & Topping
Line a cookie sheet with parchment paper if you’ve got it, or foil, like I did. Mix all of your topping ingredients in a bowl, and set aside. (If you’re generally confused about how to pulverize a candy cane to add to your mixture, just stick it in a plastic bag and give it a few whacks with a rolling pin. Voila!)
Step #2: Mix Wet Ingredients
In a large bowl or your mixer (you fancy huh?), mix your oil, sugar, maple syrup and non-dairy milk. Think you’re done? Great! Keep mixing. :) Then, add in your vanilla once the batter kinda resembles applesauce.
Step #3: Add Dry Ingredients
Now’s the time to introduce your flour, baking soda, salt and cinnamon into the wet mixture, one at a time. Mix well after each addition.
Step #4: Roll
Make sure your hands are damp before you roll out small balls of the dough, and place them onto the cookie sheet. It’s super sticky. Leave a decent amount of room in between the dough balls – they spread more than I’d anticipated. Sprinkle your topping onto each one. Gently press the topping into each delicious dough ball.
Step #5: Bake, Cool & NomNomNom
Bake at 350 F for about 10-12 min., until the bottoms are brown. (And would you quit opening the oven door? Let them cook!) Then, let them cool at least 10 min. before you dive in.
