The month of December, man. I’ve eaten more cookies than I care to admit, but, ’tis the season. Aside from lots of sweets, here’s some of what else I’ve been eating.

Quick spinach, chickpea, and veggie stir fry.
Sweet potato + vegan sausage hash with some avocado.
Lentil stew !
Tofu, lettuce + just mayo in a wrap for lunch. I had two!
Thick slice of chocolate chip pumpkin bread .
Chocolate overnight oats with PB.
This was a quick stirfry I made with chickpeas, onions, and broccoli. It’s seasoned with some smoked paprika and served over quinoa!
Portobello mushroom + lettuce in a pita pocket.
Escarole and beans with some quinoa.
Spaghetti with a protein sauce, made with crushed tomatoes, TVP, and chickpeas. Super filling and fast.
Breakfast burrito!
Pita sandwich with hummus, spinach, lettuce, carrots, and balsamic tempeh.
