The month of December, man. I’ve eaten more cookies than I care to admit, but, ’tis the season. Aside from lots of sweets, here’s some of what else I’ve been eating.

Quick spinach, chickpea, and veggie stir fry.Sweet potato + vegan sausage hash with some avocado.Lentil stew!Tofu, lettuce + just mayo in a wrap for lunch. I had two!Thick slice of chocolate chip pumpkin bread.Chocolate overnight oats with PB.This was a quick stirfry I made with chickpeas, onions, and broccoli. It’s seasoned with some smoked paprika and served over quinoa!Portobello mushroom + lettuce in a pita pocket.Escarole and beans with some quinoa.Spaghetti with a protein sauce, made with crushed tomatoes, TVP, and chickpeas. Super filling and fast.Breakfast burrito!Pita sandwich with hummus, spinach, lettuce, carrots, and balsamic tempeh.Lots of mango.Vegan lasagna made by my mom! I shared this recipe in the past.Another morning, another plate of veggies + beans.Lactation cookies made by my friend, Jody. They were AMAZING!! Thank you, Jody! xoBlack bean + quinoa burrito.My brother (also vegan) made me this tofu scramble with a side of veggie bacon + sausage. YUM.Chocolate PB smoothie.Blueberry bagel with tofutti.Roasted veggies with a side of homemade hummus (my Mom made this!)Asain noodles made by my sweet Aunt! She dropped off a ton of food for us. She’s amazing.Pesto pasta.Crispy tofu nuggets + maple mustard dipping sauce.Poppy bagel with hummus and everything bagel seasoning on top of baby spinach.
