Warm Quinoa Salad Bowl

Hi friends!

A lot of you were interested in this recipe from my Instagram post. It’s not so much a recipe as it is a guide. It’s really simple to toss these ingredients together and have a delicious meal. But I wanted to share regardless because it is an awesome plant-based lunch idea. Whether vegan, vegetarian, or not… it’s healthy, filling, and bursting with flavor. Lemon, hummus, and tahini simply belong together. Mashing in the creamy dreamy avocado also makes this dish.

So if you are in desperate need of a new lunch bowl to add into rotation, I hope you’ll give this one a try. I think I’ve eaten it at least 3 days out of the week for the past month – or at least a variation of it. It’s just too good!

Recipe

You will need:

  • 1 cup chopped romaine lettuce
  • 1 handful baby spinach
  • Juice from 1/2 lemon
  • 1/2 cup cooked quinoa (warmed up)
  • 1/4 avocado, diced
  • 2 tbs hummus
  • 1 tbs tahini, drizzled on top

To make:

  • In a large bowl, toss lettuce and spinach with the juice from 1/2 lemon until coated.
  • Make quinoa according to package, or warm up leftover/prepared quinoa. Add to top of greens.
  • Layer the rest of ingredients on top – avocado, dollop of hummus, and drizzle of tahini.
