We all know the feeling, right? It’s like 4 PM and you’re just staring off into space wondering what to start for dinner. This happens more often than not these days. Willow keeps me busy!
For nights like this, I have a few go-to lazy dinners that I will turn to. Fortunately, our family really enjoys them so I don’t feel half bad whipping them out at any time. Sure, it’s always nice to have sweet and sour tofu for dinner when I am feeling adventurous, but these simpler recipes are tried and true. And I can make them in under 30 min.
#1: Tortilla pizzas. This is the all-star here… pizza night, no matter what kind, is always the best night. I simply take a large tortilla, top with tomato sauce and some veggies… possibly some cashew cheese if I have on hand. Stick in the oven at 400 F for about 10 min (or until crispy). The end.
#2: Loaded burritos. We always always always have crock-pot beans in the fridge (I make them on the weekend to have on hand for the week) so I turn to my trusty large tortillas (again) and load up with the beans, rice, veggies on hand, salsa, etc. Side of corn or another frozen veggie and you’re good to go.

#3: Knock-off pad thai. I have to say knock off because this is NOT authentic but it gets the job done and it is SO EASY AND CHEAP. Recipe here.
#4: Vegan mac and cheese. We all love mac and cheese in the house. A quick cashew cheese and boil some pasta. The end.
If I am feeling extra fancy, I’ll add some breadcrumb and bake it.
#5: Chickpea pasta. Another pasta dish, but I really love chickpeas with pasta. Either red or a lemon sauce are my go-tos.
