Feeding a Plant-Based Toddler: What Willow Eats Here’s a look at what my 23-month old is eating as a plant-based babe. Tofu scramble, toast, avocado, blueberries. Rosemary white beans, avocado, roasted carrots. Carrot cake oatmeal. Vegan pizza bites, sweet potato + tahini mash, and some pickles. She didn’t like the sweet potato mash with the tahini (boo) but ate another serving of pizza bites. Strawberry and coconut milk pie. Cream cheese toast, pesto veggie hash (she didn’t like it, but at least tried it), strawberries, and mandarins. Just Egg (did NOT like at all), toast with coconut oil, avocado. Green donut and some fruity florals. Oat pancakes with chocolate chips and some blueberries. I made some tempeh tacos one night and gave Willow some in a tortilla and also on the side… she wasn’t into the filling, much. A bit of a fail. Oops! But she ate the rice and corn. At least she tried the others! Cream cheese and avocado toast, blueberries, and peaches. GF waffle topped with soy yogurt and stewed berries. Some banana on the side. Lentil stew over chickpea pasta and some avocado. She has been really into lentils lately (yay for iron and protein!) Cream cheese toast with jam, bananas, blueberries. Lentil stew over rice and some toast/crackers with a homemade cashew cheese + herb dip I made. Yogurt bites! I’ve been doing dollops of soy yogurt and freezing them for a fun summer snack. She goes crazy and will eat the entire tray. Messy plate, but some potato hash, toast with vegan cream cheese, and strawberries. Pancakes with peanut butter syrup for extra protein and berries. Strawberry muffin. My bowl of coconut lentil stew but she ate a good amount of it! Gardein chik’n, corn and peas, guac, cucumbers (she doesn’t like but I keep trying), and some ketchup to dip.
