Recipe day, weee! This has been a long time coming, to be honest. I wanted to share this recipe a while back but kept forgetting. It is too good to not share and way too simple. So finally, here it is.
Another pasta dish because they are very easy for a busy people – moms, dads, students, working people, whatever the case. This pasta is packed with veggies. If you don’t have all of these in your fridge, that’s fine. You can swap in and out whatever veggies you like. That is the beauty of pasta dishes. But this combo is definitely delicious.
Recipe
You will need:
- Prepared pasta of your choice (I like ziti for this)
- 3 tbsp olive oil
- 6 cloves of garlic, sliced thin
- 2 cups of kale, roughly chopped
- 1 can of diced tomatoes (don’t drain)
- 1/2 cup grape tomatoes, halved
- 1 zucchini, sliced
- 1 sweet onion, sliced thin
- Vegan parmesan cheese (optional)
To make:
- Prepare pasta of your choice according to package.
- While pasta is cooking, heat up olive oil in a pan and add garlic and kale. Turn heat to medium, cover, and allow to wilt down (about 5 minutes).
- Add in a can of diced tomatoes, grape tomatoes, zucchini, and onion. Turn heat to low and allow to simmer/cook down for about 10-15 minutes.
- Once pasta is done, toss in and top with vegan parmesan cheese.
- Enjoy!
