Vegan Mac & Cheese for Kids

A recipe for the little loves today! Or for a grown adult who just needs some healthy-ish mac and cheese in their life. Either way, it’s all good.

If you ever miss boxed mac and cheese, you’re not alone. It’s one of my favorite comfort foods. I have made it many different ways but this is my favorite and has most closely resembled the boxed stuff (to my taste buds, anyway!) I think the secret is the vegan cheese shreds and butter. I didn’t say this was 100% healthy… just healthier. Ha!

Here’s the recipe. Enjoy.


Recipe

You will need:

  • 1 box of Small shells (or whatever pasta you like)
  • 1/2 cup raw cashews
  • 1/4 cup cooked sweet potato (optional veggie)
  • 1/4 cup nutritional yeast
  • 1/2 – 3/4 cup unsweetened soy milk (or your choice non-dairy milk)
  • 1/4 cup vegan cheese shreds
  • 2 tbsp vegan butter
  • Salt and pepper, to taste

To make:

  • Prepare pasta according to package.
  • In your blender, add raw cashews, sweet potato, nutritional yeast, and non-dairy milk. Start with 1/2 cup of milk and blend. Add more as needed for desired consistency.
  • Once pasta is done, add your cashew cheese sauce and stir in vegan cheese shreds and butter while the pasta is still hot so everything melts together.
  • Add salt and pepper to taste.

It is that easy and trust me… soooo delicious. So if you need something a bit healthier than the usual boxed stuff, I hope that this becomes a favorite in your house! It certainly has in ours. x
