Jammy oats with cashew cream. I make cashew cream by simply blending raw cashews with some water. So creamy – you can even add a little vanilla if you want.Homemade granola over cashew yogurt and topped with bananas.Pumpkin mac and cheese with broccoli.THIS baked mug oatmeal is my new favorite. You can see how I make it here.Brown rice, leftover curry, broccoli, and roasted celery.Apple & peanut butter oats.Barley with balsamic mushrooms, zucchini, sweet potato, and tofu.Cauliflower mac and cheese.Tofu parm and bowties with homemade gravy.Veggie burger with ketchup, guac, and pickles.Spaghetti with vegan chik’n cacciatore. Recipe coming soon!Chili with brown rice and a baked sweet potato.Just Egg breakfast sandwich with some tempeh bacon and guac.Broccoli rabe pasta. One of my favorites for lunch!Escarole and beans for life.Oats with baked cinnamon sugar apples on top.
