Vegan Pregnancy Second Trimester Meal Ideas

Hi friends!

Where are all my fellow sandwich-lovers at? Sandwiches are a go-to over here because they are fast and easy to pull together for me and the kids during the week. And while I love a good PB&J (and my kids too) I like to switch things up and keep it interesting. So here are five of my favorite vegan sandwiches. I hope you enjoy. x

#1: Chickpea Egg Sandwich

If you follow me on Instagram, you know this is one of my favorite sandwiches ever. The chickpea egg is hearty and a great source of protein and fiber. I love to have mine with avocado, vegan cheese and hot sauce. Sometimes some vegan mayo, too.

#2: Roasted Red Pepper & Hummus

This is as easy as it gets. Slap some hummus and avocado on your bread, add lettuce, and some roasted red peppers. I always keep a jar of them handy in the fridge because they are 1, delicious and 2, convenient. I never roast my own.

#3: White Bean Chik’n Salad

Creamy creamy and a great alternative to chicken salad! Alternatively, you can also make chickpea salad, which is just as delicious. You do you.

#4: Buffalo Chik’n Sandwich

If you like vegan chik’n, this is a great way to jazz it up. This is a comfort food for me in particular because before eating vegan, buffalo chicken was my favorite. Having this is a great alternative and so satisfying. You can put it on bread or whatever you’d like, but a wrap is my favorite.

#5: BBQ Tempeh, Tomato & Mayo

This is so simple and you could of course add more to it (lettuce, onion, vegan cheese, and pickles would be awesome) but it is just so good. I simply slice the tempeh and then brush down with some bbq sauce before baking at 400 F for about 20 minutes. Once done, add the toppings and that’s it. Tempeh is AMAZING!!
