Calling all oat lovers. ;)
I think it comes as no surprise that oats are my love language. I eat them one way or another nearly every single morning, and if I skip out and go with something savory, you better believe I eat them for lunch, snack, or dinner later in the day. My day feels incomplete without them.
I like to keep things interesting with a wide variety of toppings but that’s not the only way to get creative with them. There are a few ways I like to eat my oats and I am going to share five favorites with you today. I hope you enjoy the breakfast inspiration. x
Baked into a Mug
This is like eating cake for breakfast and probably my favorite way to eat oats on this list. I am a dessert person and having something that feels like dessert first thing in the morning makes me very happy!
To make the base:
- 1 mashed banana
- 1 tsp baking powder
- 1 tbsp maple syrup
- Splash of non-dairy milk
- Splash of vanilla extract
- Pinch of salt
- 5 tbsp of oat flour
- Add chocolate chips if desired
Stir well in your mug of choice and microwave on high for 3 mins (or until baked through). For a chocolate version, I add 4 tbsp oat flour and 1 tbsp unsweetened cocoa powder. Sometimes I stir in some PB2 powder or top with bananas or jam… get creative!

Layered as a Parfait
Sometimes I like to layer up my oats for a different experience! I simply make my oats according to package (added unsweetened dark chocolate cocoa powder to these) and layer with yogurt, nut butter, fruit, etc.
Microwave/Stove Top
This is the most common, but I am including it anyway. Here are my favorite toppings:
- Saucy cinnamon apples
- Chocolate date sauce and bananas
- Chocolate date sauce and cherries/berries
- Chocolate date sauce and peanut butter
- Jammy berries
- Cinnamon and banana
- Nut butter and banana
- Almond extract and cherries
- Vanilla soy yogurt and fruit
- Banana nice cream with chocolate date sauce and tahini (pictured above)
Overnight
Overnight oats are delicious if you can remember to prep ahead of time. I usually only enjoy them in the summer heat and will make a few batches at a time for the week. I make a simple base:
- 1/2 cup rolled oats
- 1/2 cup almond or soy milk
- 1 tbsp maple syrup
- 1 tbsp ground flaxseed
- 1/4 cup yogurt (not necessary, but yummy if you have it)
- 1 tsp vanilla or a scoop of unsweetened cocoa powder
- Fruit, if desired
Shake it up and let sit overnight!
As Pancakes
Yes, I make my pancakes with oat flour! Here is my go-to recipe, but feel free to omit the chickpea flour and use all oat flour (as I often do). I like them plain, with blueberries or chocolate chips, topped with fruit, and a little drizzle of chocolate date syrup.
