Hi friends! Back with a large round-up of all the delicious things I’ve been enjoying in the sweet sunshine. It may seem repetitive but I really am a creature of habit and I go in and out with recipes that are my staples during certain times of year. Aside from all this deliciousness, I am also enjoying lots of non-dairy ice cream treats and all the fresh fruit. I forget to take pics a lot of the time but just know there is a healthy balance going on over here.

Chocolate oats with a little Kite Hill Greek yogurt, berries, pumpkin seeds, and walnuts.
Burrito bowl with brown rice, corn, black beans, lettuce, tomatoes, cashew cream, and hot sauce.
Nacho night! Homemade corn tortillas, pinto beans, vegan queso , cashew cream, lettuce, tomato.
PB mug oats with a side of Greek yogurt, banana.
Kale salad with carrots, walnuts, golden raisins, lemon tahini dressing.
Greek yogurt with frozen raspberries, granola, and drippy PB. YUMMMM.
Brown rice, lentil, and quinoa bowl with roasted cauliflower, tahini, and sriracha.
PB mug cake again with extra PB on top and raspberries.

My usual kale salad with a side of edamame.
GF pasta with peas and tofu. A little tahini/nooch/salt/pepper.
What I drink? Lots of peppermint tea and water! But also loving fruit iced tea now…

Oatly is my favorite non-dairy ice cream, hands down. All of the flavors are hits. I just love a good classic ice cream flavor!
Lemon tahini kale salad tossed with quinoa and a side of roasted potatoes.
I made a lentil/walnut taco meat and enjoyed that as a salad with all the toppings. I love using Kite Hill Greek yogurt as my sour cream. So refreshing and lots of protein.
Chocolate oats with strawberries, walnuts, chia seeds, and some vanilla Greek yogurt.
Date/PB/Chocolate frozen treat. I am addicted to these.
Banza chickpea pasta with garlicky rabe and walnuts. This has been my favorite combination lately!
Yogurt, banana, granola, walnuts.
Hazelnut oat latte for mom and a oat hot chocolate for my oldest.
My on the go snacks these days… always a piece of fruit and a Misfits protein bar.
