Hi friends! I hope you’re all enjoying the heat of the summer and eating well. Summer meals for me usually look light, with lots of cold pasta or chickpea salads, refreshing leafy salads, and summer rolls. My usual oats are always my go-to breakfast but I also enjoy banana nice cream bowls with granola and fruit and Greek yogurt bowls. All easy easy. And you know I am enjoying all the summer treats like homemade strawberry shortcake, ice cream, and s’mores nights because *balance* is beautiful and I live for summer desserts.
Air-fried oatmeal cookie topped with chocolate chips and PB. I simply make this recipe and shape into one big giant cookie then air fry for about 10 min or so.
Dinner of mashed potatoes, asparagus, salad, rosemary butter beans, and balsamic tofu.
Creamy blended oats with strawberries, pumpkin seeds, walnuts, and drizzle of maple syrup. I like to make my oats with soy milk for an extra protein boost.
Rice cake snack topped with buffalo chickpea salad, avocado, and cashew ranch dressing.
Chickpea oat pancakes with blueberry compote.

Living for summer rolls !! I love mine best with mango and avocado. The combination is *chefs kiss!*

Large refreshing salad with lettuce, tomato, cukes and topped with more of that buffalo chickpea salad (seriously so good) and a drizzle of cashew ranch and hot sauce.
Garden romaine topped with chickpea salad, red cabbage, carrots, avocado, sauerkraut, red pepper flakes, and sesame seeds.
Vanilla yogurt (Siggis plant based is my new favorite) with mango and crushed almonds.
Avocado toast and nectarines… which have been my favorite fruit this season.
Rice with Cajun Daring chik’n and garlicky kale for dinner.
Chickpea pasta with summer squash and zucchini, garlic, olive oil, crushed walnuts, nooch.

We missed u-pick strawberries this year but we did make it for raspberries… so raspberry shortcake it is!
I’ve been in a cold cereal mood all summer. Bananas and soy milk with it.
Rice, broccoli, and Daring teriyaki chik’n. I have been loving these because they are GF and have a nice iron boost.
