If you know me, you know I love sandwiches. Just typing that out, I feel like Joey from Friends . Ha! It’s just a quick and easy lunch staple, and there are endless possibilities when you eat plant-based/vegan. Some of the below are actual recipes and some are just for ingredient inspiration. I hope that this compilation gives you some new ideas for lunch (or any time of day, really). They are all filling and perfect to bring to work/school, too.
LOL. Okay, onto the vegan sandwich inspiration.
Balsamic Tempeh in a Pita Wrap
Pita sandwich with hummus, spinach, lettuce, carrots, and balsamic tempeh. I simply marinade the tempeh in balsamic vinegar and olive oil with some salt and pepper for an hour or so and then bake on a lined sheet at 400 F for 25 minutes. I store leftovers in the fridge for sandwiches/salads during the week, too!
Buffalo Tempeh
Buffalo tempeh sandwich. Recipe for buffalo tempeh HERE . I have lettuce and mayo on this one, but you can add anything. I think tomato would be an awesome addition.
Cream Cheese Sammy
Spinach, tomato, and cream cheese sandwich on lightly toasted bread.
Spinach and Avocado
Sautéed spinach and avocado are a great combination. I love this for breakfast.
Tofu + Quinoa
Tofu and quinoa wrap with all the veggies (such as red pepper, cucumber, and spinach).
Bagel Sandwich
White bean salad bagel sandwich. Recipe for the filling HERE .
Broccoli Rabe
Broccoli rabe, garlic, and olive oil in a sandwich. I just prepare the broccoli rabe in a pan with a little water, olive oil, garlic, salt, and pepper. Once wilted, slap it between some bread.
Tofurky and Cheese
Tofurky + chao cheese sandwich, if you are into mock meat and cheese products.
Veggie Burger Wrap
Veggie burger wrap. Use your favorite vegan burger and add some veggies and dressing. Above is with lettuce, tomato, pickles, and mustard.
White Bean Salad
Again, the white bean salad but on regular ‘ol bread. If you want to switch things up, there is also an amazing chipotle chickpea salad recipe that I love.
Ranch Burrito
I share the recipe for this ranch burrito here – it is in a bowl in the recipe, but just dump it all into the wrap!
Tofurky and Veggie
Tofurky + veggie sandwich with mustard.
Falafel Wrap
Find your favorite falafel (I like Trader Joe’s frozen falafel for a fast and easy fix) and wrap up with hummus, tahini, cucumber, and lettuce.
Tofu and Avocado
Tofu and avocado breakfast sandwich  with some pesto.
Loaded Veggie + Beans
A wrap with black beans, barley (or any grain), avocado, spinach, red pepper, corn, and onion.
Mediterranean Inspired
Mediterranean wrap featuring roasted red peppers, sun-dried tomatoes, avocado, cucumber, hummus, and lettuce.
Sweet Potato + More
Sweet potato with black beans, tomato, lettuce, cucumbers, and pickled onions.
Collard Greens Wrap
Love using a collard leaf for a veggie wrap. This one has sliced carrots, red pepper, cauliflower (can’t see it much), and mustard.

Roasted Red Peppers
Soft bread piled high with roasted red peppers (tossed with olive oil, balsamic, and lots of garlic!)
Gardein Chickenless Strips
Gardein chickenless sandwich with some mayo + lettuce.
Meatless Balls
The Ikea veggie balls are so versatile, but you can use any meatless meatball (homemade or frozen). I cooked these up with some olive oil, garlic, onions, and peppers. A meatless ball and onion sandwich is also a good option.
Portobello Burger
Portobello mushroom burger + lettuce in a pita pocket with some vegan mayo.
Baked Tofu
Baked crispy tofu, lettuce + just mayo in a wrap. My recipe for baked tofu can be found HERE .
Mozz Veggie Burger
Sweet potato burger (frozen brand from Whole Foods) with vegan mozz, avocado, and lettuce.
Cream Cheese and Tomato Bagel
Spinach bagel with Tofutti cream cheese + tomato as a sandwich.
