Plant-Based Life: What I've Been Eating Lately

Hi! How are you guys? Anyone else out there on a weight-loss journey? I am still trying to do better, but the summer is so hard. So much good food! I also find that I am always way busier in the summer, so I don’t have as much time and/or energy to plan meals. I think once the fall comes, it may be a bit easier for me, but we’ll see. Maybe I am just making up excuses – LOL.

At any rate, I haven’t been eating bad or anything. You’ll see below. BUT! I have been power walking with my aunt 3-4 times per week… an hour at least with hills and all. That alone makes me feel good. Not worrying about the scale.

Slowly started adding a bit more oil into diet (not always, but sometimes). This pasta with made with olive oil, extra garlic, cherry tomatoes, and kale. So yummy!
