A fast veggie and chickpea curry over a baked sweet potato.
Lentil soup over quinoa with a side of breadsticks.
Tortilla pizza night. Lots of different toppings here. My favorite is the pesto with tomatoes and vegan chik’n.
Baked broccoli mac & cheese with a breadstick.
Another morning, another chickpea egg sandwich .
Indian takeout! We got potato dosas and cauliflower 65.
Potato and vegan cheese hash, side of spinach and peaches. Iced mocha latte .
Hummus and lettuce sandwich with a side of couscous.
Tofu scramble, spinach, and vegan cheese breakfast sandwich.
Peanut butter pancakes with coffee.
Creamy hummus pasta.
Rice, baked potato topped with vegan queso , tomatoes, and hot sauce, roasted carrots and zucchini. Just a big plate of plants, really. SO SATISFYING!
