Vegan Tuscan White Bean Soup

Plant-Based Meal Ideas: What I've Been Eating Lately

Hi friends! I have a very easy soup recipe today. It’s nothing groundbreaking but it is a comforting dish that includes ingredients you most likely already have in your fridge and pantry. It’s a really simple recipe that can be whipped together easily for lunch or dinner. And the flavors are so beautiful that it will feel much more complicated than it is. I hope that you enjoy it.

Recipe

You will need:

  • 2 tbsp olive oil
  • 1 lg onion
  • 6 cloves garlic, sliced thin
  • 1 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup white beans
  • 1 can diced tomatoes
  • 5-6 cups vegetable stock
  • 1 tsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • Pasta of your choice (optional to serve over)

To make:

  • In a large pot, add olive oil, onion, and garlic and cook over medium heat for about 3 minutes, or until onions are tender. Be careful not to burn the garlic.
  • Add carrots, celery, white beans, and can of diced tomatoes (including the juice, vegetable stock, and herbs/seasoning. Bring to a boil.
  • Once boiling, cover and set to simmer for about 45 minutes.
  • Prepare pasta according to package. I like elbow pasta for this.
  • Once everything is done, ladle over your pasta and enjoy!

This is a family favorite, for sure. Maybe it will become one of yours, too! Have a great day and thanks for being here. :) x bianca
