Hi friends! My favorite kinda post… I think a lot of you agree. Here’s a look at what I’ve been eating lately as someone who eats plant-based/vegan and gluten-free. I’ve been on a Thai food kick and you’ll probably see that below with a lot of the flavors going on. I hope you enjoy the inspiration. x
Rice bowl with lots of veg, tofu, and a spicy almond sauce. For the peanut sauce, I don’t measure but it is a blend of almond butter, maple syrup, lime, soy sauce, and Thai chili.
Thai red curry – butternut squash, chickpeas, carrots, spinach, etc… served over jasmine rice.
Creamy oats with chocolate peppermint drizzle, bananas, and almond bits. For the peppermint chocolate, I just do 1 tbsp unsweetened cocoa powder, 1/2 tsp maple syrup, with a drop of peppermint extract and thin out with warm water.
Jasmine rice with edamame, scallions, and cucumber. Some soy sauce , sea salt, and lime on top.
GF corn muffins with some raspberry jam.
Spicy yellow curry with jasmine rice and zucchini.
Smoky white beans with GF tortilla and a side salad.
Snacking on these from Aldi. They were delicious.
Oats with lots of blueberries and almond butter. Sprinkle of coconut sugar.
Red lentil pasta with a roasted red pepper sauce. Similar recipe here .
Another rice bowl with edamame and cukes. Avocado thrown in, too.
Snacking on steamed broccoli and queso .
Baked chocolate oat bits with banana and crunchy PB drizzle.
I actually do not remember exactly what this is… but I *think* it was a red curry I made with veg and rice.
Are you shocked? I know you know I love my chocolate bake oats and banana nice cream .
A fast go-to lunch for me lately is jasmine rice with edamame, tamari, and a little sesame oil. Simple and satisfying.
Creamy oats with berries and walnuts.
Rice wraps loaded with rice noodles, red pepper, carrot, cucumber, lettuce, and avocado. Side of spicy peanut sauce to dip.
Snacking on banana with a little almond butter and almonds.
Mango, banana, and spinach smoothie.
Spicy PB rice noodles with scallions.
Grabbed this lemon square from a local vegan and GF bakery and it was to diiiiieeee for. I haven’t had one in probably 10 years.
Also got this Boston creme cup… also unreal.
Chickpea fritters with vegan tzatziki, avocado, and hot sauce!
Thai Curry Noodles with tofu… lots of veg. I think there’s corn, cabbage, scallion in there…
Mexican tofu plate with air-fried GF tortillas to pile everything onto.
Brown rice with a Thai Curry and veg situation over it. Bok choy is one of my favorite vegetables… anyone else?
Another morning, another oat mug cake.
Surprise surprise! More noodles and curry! I really love leftovers.
Chickpea fritters and a side of fruit and tea.
