Did you know that breakfast is my favorite meal of the day? I know my breakfasts can get a bit repetitive; I really love a great big bowl of oats. ;) But there are mornings or even weeks at a time when I can’t even look a bowl of oats in the eye and need something else to switch things up. So instead of the “prepare according to package” type oatmeal, I have gotten creative with them, as well as added in a few new favorites into my rotation. Today, I want to share with you my five very favorite breakfasts that are both vegan and gluten free.
1. Tofu & Cashew Herb Cream Cheese & Veg
I love this cream cheese recipe from Pick Up Limes. She is one of my favorite vegan YouTubers! I love that it features tofu for an extra boost in protein/iron, too. For GF bread, I grab buns from a local bakery or enjoy O’Doughs bagels and sandwich bread. You can top with whatever veg you like! I have been loving tomato, red onion, and cucumber. Sometimes I add shredded carrots, pickled onions, scallions, and spinach.
2. Oat & Chickpea Pancakes
This is our family favorite pancake recipe. I like using a blend of oats and chickpea flour for a bump in iron! I like to have mine with jammy berries a lot of the time.
3. Breakfast Fritters
Can you tell I really like chickpea flour? I was experimenting with it since I already love making chickpea eggs. I added a ton of veg and these fritters were born. Such a great savory breakfast! I like to have a little vegan tzatziki on mine. Avocado and hot sauce, too. They would be great with vegan sour cream and salsa, as well.
4. Chocolate Mug Cake
The infamous mug cake. If you follow me on Instagram, you probably see this a lot. Unsurprisingly, because I eat it a lot. I like to feel like I am having cake and ice cream for breakfast but with a healthy twist.
5. Creamy Blended Oats
I wasn’t going to finish this list without some kind of oatmeal bowl on here, let’s be real. But I have swapped regular rolled oats for blended oats instead. I simply run them through the blender first and then prepare on the stove (recipe linked above). They are super creamy dreamy this way!!
