Vegan Pulled BBQ Jackfruit

Before I started eating plant-based/vegan, I enjoyed my share of meat. Pulled BBQ chicken (not really pork) was one of my favorite sandwiches. With some coleslaw on the side, I was a happy camper. Honestly, just about anything BBQ, I was into. I just love a sweet BBQ sauce. So, when I saw the BBQ jackfruit craze going around… I was in. I never even knew jackfruit existed until I became a vegan. And I have to say – it is all that it is cracked up to be. It’s freaky how much it compares to pulled meat.

Have you ever seen a jackfruit? It’s actually terrifying. I was intimidated the first time I cut into one – the inside is strange!! But thank God for YouTube, right? Moving forward, I prefer he easy way – canned jackfruit. It worked just as well and tastes great. I get mine on Amazon.

If you’ve been intrigued by pulled jackfruit but never actually made it, I am here to tell you that you need to – and it is very simple. Allow me to share what I did to spice up that canned stuff. If anything at all, I hope this post helps nudge you to stop drooling over pics on the internet and make your own damn jackfruit.


Recipe

You will need:

  • 1 tsp olive oil
  • 1/2 sweet onion, sliced
  • 1/2 green apple, diced small
  • 1 can jackfruit, drained, rinsed, and pulled apart with fork
  • 1/2 cup your favorite vegan BBQ sauce (yes, canned… fast and easy)
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste

To make:

  • In a pan over medium heat, add olive oil, onion, and apple. Sauté and stir occasionally for about 5 minutes (or until they are softened).
  • Add your jackfruit and pull apart with fork as you cook over medium heat, another 5-10 minutes.
  • Add BBQ sauce, paprika, salt, and pepper – bring heat down to low and cover for about 10 minutes. Stir occasionally so the bottom of the pan doesn’t burn (though, a little burnt on the bottom adds to flavor for sure).
  • Add to your favorite bowl with some grains or on a bun.

Enjoy the deliciousness that is pulled BBQ jackfruit. It will feel really indulgent… trust me. You’ll want to eat it all in one sitting!! Any other fans out there? xx bianca
