So much vegan toddler food inspiration below the cut. I’ve been compiling her food more than my own lately. Willow continues to be an incredible eater… with the exception of red pepper. She is just not into it whether they are sautéed, in sauce, whatever the case. She also seems to be thrown off my the texture of broccoli – she makes a face, but still eats it. Honestly, I am just so happy she eats 95% of the things I put in front of her!
Her favorite lately seem to be red lentil chili, pancakes (always), muffins, any kind of pasta, and sweet potato fries baked with smoked paprika. I’ve also introduced her to tempeh in the form of meatballs and she is very much into it. Makes me so happy!
But enough rambling, onto the good stuff.

Just a thought … have you tried removing the wax ‘skin’ from the red pepper? She might like it more then! Congrats to Willow for being such a good eater!

Amber, that is a great idea. I hadn’t thought of it. I will give it a try! Thank you so much. xo
