Toasted Quinoa + Chia Chocolate Crisps

Quinoa Chia Chocolate Vegan Recipe

Hi friends :)

I’ve been really enjoying a large batch of these crisps that I made. I was inspired while browsing a local HomeGoods and found quinoa chocolate clusters. I added the addition of chia because, well, I’m sneaky like that. They are perfect for those times you need something sweet after dinner, or even a quick snack before bed (you know, 1 or 2…) Also, FOR HALLOWEEN! Get on these before tomorrow.

Recipe

You will need:

  • Your favorite dark chocolate (I use Trader Joe’s 72% dark chocolate)
  • 1 tbs coconut oil
  • 1/4 cup quinoa (uncooked and rinsed)
  • 1-2 tbs chia seed
  • Course sea salt (optional)

To make:

  • Melt dark chocolate in microwave or double-broiler, set aside.
  • In the meantime, over medium heat, melt coconut oil and add quinoa. Allow to simmer on stove… stir with a wooden spoon as it toasts. It will start to smell nutty!
  • Once you are satisfied with the toasted quinoa, add to dark chocolate along with the chia seeds. Stir well.
  • On a foil-lined baking sheet, spray a bit of cooking spray and dollop chocolate mix with a spoon. Sprinkle with optional sea salt.
  • Allow to set in the freezer for at least 30 minutes.
  • In a few hours, store in an air-tight container in the freezer.

These are pretty quick and easy, and remind me of a healthier crunch bar. I also hear that puffed quinoa works really well (no toasting required). I couldn’t find any near me – anyone know of a good brand?
