So much vegan toddler food inspiration below the cut. I’ve been compiling her food more than my own lately. Willow continues to be an incredible eater… with the exception of red pepper. She is just not into it whether they are sautéed, in sauce, whatever the case. She also seems to be thrown off my the texture of broccoli – she makes a face, but still eats it. Honestly, I am just so happy she eats 95% of the things I put in front of her!

Her favorite lately seem to be red lentil chili, pancakes (always), muffins, any kind of pasta, and sweet potato fries baked with smoked paprika. I’ve also introduced her to tempeh in the form of meatballs and she is very much into it. Makes me so happy!

But enough rambling, onto the good stuff.

Spaghetti with gravy, tempeh meatballs, and a little bit of vegan cheese.

What a crappy photo, haha! But she loved this. I made some refried pinto beans with rice with some corn tortilla and avocado.

I’m not perfect and some dinners look like this – tofurky hot dog with some ketchup and a side of smoked paprika sweet potato fries. She loved it.

Agli e Olio with some carrots and a few chickpeas.

The best shot I can get of smoothies these days since she freaks out as soon as she sees me making it, lol! This one is pear, kale, banana, and almond milk.

Vegan meatballs + peppers with some avocado. She picked around every last pepper… she’s not into it.

Refried bean + cheese quesadilla with avocado.

Tempeh meatballs with a side of smoked sweet potato fries and mashed potato/sweet potato.

Chickpea patty, broccoli, and avocado. She isn’t crazy about broccoli but she picks and chooses pieces. Maybe it is a texture thing?

A dissembled burrito, basically. Rice, beans, and cashew cream, corn tortilla, carrots.

Chocolate chip pancakes and banana. We had Sunday pancakes as a family… so this is a little bit of a treat.

Bean, cashew cheese, and tomato quesadilla night. Some peas sprinkled in.

  1. Just a thought … have you tried removing the wax ‘skin’ from the red pepper? She might like it more then! Congrats to Willow for being such a good eater!
