Hi friends! More food inspiration below – new ideas, same big appetite while I continue to nurse my infant. I want to put together another “what I eat in a day ” vs. this type of large dump so hopefully I remember to do that soon. Do you guys prefer this or a single day or a mix of both? Lentil stew over rice.
English muffin with almond butter and banana.
Tofu scramble with salsa in a wrap.
Rice with onions and peas, topped with hummus. I ate this for breakfast, to be honest.
Sweet tooth!! My husband brought home vanilla almond ice cream and I topped with some saucy berries .
Garlicky broccoli rabe .
Lentil sloppy joe filling over rice with some cashew cream.
English muffin with Miyoko’s chive cream cheese.
Pasta tossed with artichoke hearts, tomatoes, onions, garlic, and olives. Side of steamed broccoli.
Tofu quiche on an english muffin with hummus and hot sauce.
Roasted chickpeas, rice, and thawed veggies.
Oats with a cherry smoothie and topped with almond butter.
The last bit of lentil sloppy joe filling I made for dinner earlier in the week topped with cashew cream.
Spaghetti with garlic, broccoli, and vegan parm.
Rice with peas and onions and topped with teriyaki chik’n – gardein brand.
