10 Vegan Dinners in 30 Minutes or Less

Hi friends!

A heavily requested post today! Vegan dinners that can be made in under a half hour… because let’s be real, sometimes we don’t have the time or simply the energy to do anything beyond that. I have to say that a lot of the recipes I share on here are usually under the 30-minute mark because I also don’t have the time to do anything elaborate. I aim for quick, healthy, filling, and delicious enough for two toddlers to approve.

If you are like me, then maybe the below will appeal to you. These recipes are some of our go-tos because they are that easy. I hope that you enjoy. x


#1: Lemon Chickpea Pasta

Seriously one of my favorite meals ever. The lemon works so well the the chickpeas. This is my kind of comfort food and it pulls together so quickly.

#2: Fast & Cheap Pad Thai

Pro tip: Make a huge batch of this pesto recipe and freeze for later for quick meals in the future.

#7: Vegan Shepherd’s Pie

You can make this extra quick by layering up instant mashed potatoes, frozen veggies, and Gardein crumbles. You could also make your own mashed potatoes, but that is entirely up to you! Layer up and bake at 400 F for about 25 minutes. Just remember to season your veggies fast with some onion powder, garlic powder, salt, and pepper.

  1. I’m going to have try the walnut pesto penne and potato chickpea curry! I am always on the go, but it would be nice to have a home cooked meal once in awhile.
