Hi friends! It’s been a hot minute since I’ve posted one of these compilations… and there are a lot of old photos in here. It honestly just got away from me. But I hope the ideas help… even if you notice summer weather and Halloween-themed plates in the mix. Haha! Here’s a look at what my plant-based kids eat for some meal inspiration. Enjoy. x
Hummus wraps, pears, carrots for W, broccoli for Fi, and vanilla soy yogurt.
Vegan “Lunchables” lol. They really enjoyed putting together their own mini sandwiches. I used tofurky and violife cheese. Some vegan mayo and ketchup (my kids love this combo) and a side of tomatoes and cinnamon apple straws.
Lettuce and mayo sandwiches (this is literally what they ask for lately…), cheesy broccoli, Gardein chik’n tenders with maple mustard dip.
Just Egg sandwiches with vegan cheese and ketchup. Side of peaches.
Tofutti cream cheese toast sticks, olives, peas and carrots, and applesauce.
Pancakes with cocowhip and cinnamon apples.
Chickpea salad wrap (this recipe but with chickpeas instead of white beans), pickles, apples with pb.
Leftovers day! Hot dog buns split in half and brushed with some garlic, olive oil, lentil red sauce, and topped with nooch/vegan cheese. Fruit and veg and olives.
Black bean burritos with vegan cheese and salsa with a side of leftover mashed potatoes and tofu. I know this is so random, lol. BUT sometimes you just serve what you know they will eat.
Double chocolate oat cookies and milky peppermint tea for storytime.
Lentil stew and bread & butter to dunk.
Red lentil pasta sauce, avocado, crackers, berries, carrot sticks with vegan cashew ranch to dip.
Black bean, salsa, and vegan cheese burritos. Side salad with cashew dressing, tofu bites, ketchup dip.
Hummus pasta, pineapple, broccoli with vegan ranch to dip, romaine salad.
Bean, vegan cheese, and salsa burritos, cashew ranch with sweet potatoes and broccoli to dip, and oranges. It may not look like a lot on the plate but that is because I don’t like to waste food and my kids are iffy on their veg usually. If I see them enjoying, they will ask for more or I will offer.
Snack platter! I like to make these every once in a while to offer a good variety so they can pick and choose. I serve with a sandwich of their choice and that is lunch.
Oat cookies and books! Recipe for these cookies in my eBook.
Vegan “nutella” and strawberry sandwich.
Mini bagels with chocolate hummus and a side of fruit.
PB&J with steamed carrots and hippeas.
Dino waffles (made green with spinach) and raspberries. Maple syrup to dip.
Creamy mushroom soup with bread and butter to dip.
