10 Easy Vegan Meals You Already Have the Ingredients For

Easy and quick – if the dish fits this criteria, I am all in. It’s honestly all I have time for these days. A lot of people tend to think that eating vegan takes a lot of preparation, time, and money. That couldn’t be further from the truth. Many vegan meals consist of everyday ingredients that you already have in your fridge and pantry.

I took to Instagram stories a bit ago and asked what you guys wanted to read on here. This was a topic that was mentioned and I was pretty excited about it… because it’s a great one. And one that I’ve been asked many times before. I hope that this list of meals/recipes help you to see how easy it can be to whip something up fast.

I’ll share some breakfast, lunch, and dinner ideas (with a heavier focus on dinner… I feel like that is the pain point for most people!)

  1. Hi Bianca, I am soooo glad I found your blog! My favorite posts are the “What I’ve Been Eating Lately” posts because I hate cooking with recipes and I just need fresh ideas about what to throw together. I really like that you use simple, nourishing ingredients that I already buy anyways! I know you’ve done a couple posts about how to grocery shop on a budget. However, I’m wondering if this is how you always shop every week, or if that was just a one-time challenge? I think it would be really neat to see some regular posts from you with your grocery hauls, to see how your groceries turn into the awesome meals you show each week or two. My biggest problem nowadays is figuring out what and how much to buy each week so I stay on budget. Thanks for everything!

    1. Hi Nicole – wow, thanks for your comment. I’m so glad you enjoy the posts :) that makes me so happy!!

      The budget posts vary in price range because I will be honest, each week is kinda different! I find that probably once a month we have a $60-$70 grocery haul and then the following 3 weeks are usually lighter, in the $30-$40 range. The expensive trip usually includes re-stocking ingredients like peanut butter, tahini, coffee, bag of potatoes, dry beans, cashews, frozen fruit, olive oil, etc. You know, the products that last us over a period of time but then suddenly all creep up on you at once. And the lighter weeks are our “usuals” for the week, which is a ton of fresh produce, canned goods, coconut yogurt, tomato paste/sauces, dough, wraps, bread, non-dairy milk, etc.

      I will have to make a conscious effort to document my hauls better and share on here. I feel like lately I’ve been slacking on that because the minute I get in from a grocery haul, my daughter starts taking everything out of bags and “helping mommy” and my main focus is just to put stuff away, lol! But maybe I can take a photo of my receipt and go from there. Or something like that! I will add this idea to my editorial calendar and try my best to pull something together soon.

      But one tip that I will say that has helped us spend less is to not buy in bulk as much. I used to be a huge bulk shopper and there is a time and place for it, but I like to keep that to once a month, like I said. And the other 3 weeks I just restock as needed. At first it gave me anxiety having less in the house, but you adjust and it really did save us money.

      I hope this response helps. Sorry it is lengthy!! But I will definitely try to pull something together soon. Maybe I will focus the budget on a $30-$40 week, if that is what you are into :)
