No one wants to cook over a hot stove in the summer, right? I tend to gravitate towards much lighter and cooler meals… which usually results in easier preparation and clean-up (a great perk!) And with fresh fruit and vegetables in abundance at the farmer’s markets, many of these are also refreshing and vibrant.
Here are my favorite no-cook vegan dishes for summertime.

These are so so refreshing and easy to make.
#5: Healthy Fudge Balls

This might not be a “dish” but it’s an awesome breakfast in the summer – especially on the go. Packed with nutrition and to be honest, tastes like dessert.
#6: Apple Chickpea Salad Sandwich

Savory with a hint of sweetness.
#7: Ranch, Black Bean, & Corn Tacos

Tacos again, but much different than the above. For savory lovers.
#8: Falafel Salad

Easy because you can buy the falefel pre-made. I love the Trader Joe’s brand – just toss in microwave and top a salad.
#9: Mayo-Free Coleslaw

One of the best summer side dishes. This one is tangy and delicious.
