Tomato, Rabe, & Olive Penne

Hi friends!

I am trying to post more recipes on here. A lot of them are going to be simple stuff, but this is what we eat and that’s that. I am not a professional chef or anything, but I was raised in an Italian household and have been cooking/baking from a young age. It’s just more “let’s throw this together and make it work” type of cooking than anything else. Which is ideal for a busy mom of two, trust me.

Lately, there has been a lot a lot a lot of pasta in this house because it is fast, inexpensive, and the whole house enjoys it. This is one of my very favorites. I hope that you enjoy it as much as we do.


Recipe

You will need:

  • Prepared pasta of your choice (I like ziti for this)
  • 3 tbsp olive oil
  • 6 cloves of garlic, sliced thin
  • 2 cups of broccoli rabe, roughly chopped
  • 1 can of diced tomatoes (don’t drain)
  • 1 can of olives, sliced
  • Vegan parmesan cheese (optional)

To make:

  • Prepare pasta of your choice according to package.
  • While pasta is cooking, heat up olive oil in a pan and add garlic and broccoli rabe. Turn heat to medium, cover, and allow to wilt down (about 5 minutes).
  • Add in a can of diced tomatoes and your olives. Turn heat to low and allow to simmer/cook down for about 10-15 minutes.
  • Once pasta is done, toss in and top with vegan parmesan cheese.
  • Enjoy!

  1. I love simple recipes, I like cooking but don’t want to spend hours in the kitchen preparing something. Plus I am a single person so I like simple or bowls of everything, it makes it easier to just cook once and then have food all week long!
