Plant-Based Meal Ideas: What I've Been Eating Lately

We’re an Italian family, so pasta is eaten at least once a week (usually) in this house. Not even cutting gluten from my diet has stopped these meals from being staples. Aside from being a really budget-friendly meal, there are endless ways to eat it. Veggies, proteins, creamy sauces, extra garlic… you can’t go wrong, really. It’s not always the healthiest, but it is definitely the most family-friendly.

There are also so many different types of pastas, not just the usual white or whole wheat. If you are gluten-sensitive (like me), you can try quinoa pasta, brown rice pasta, chickpea pasta, and even lentil pasta. I personally really like Banza chickpea pasta and brown rice/quinoa pasta from Trader Joe’s. All work well in the below!
